Hilah Cooking - Brussels Sprouts http://youtu.be/hulIsOd_bHU Lady Yum Yum - Holiday Vegetable Wellington http://youtu.be/VFDbtj3aVcU Cooking With Jack - Deep Fried Turkey http://youtu.be/Q38l5ORtOWc Chef Tips - Potato Stack http://youtu.be/Me0VmnBgcCM YoYomax12 - Colourful Corn Cookies http://www.youtube.com/watch?v=96oOHtdeMj8 Diva's Can Cook - Pumpkin Pie Cheesecake http://youtube.com/divascancook *Caitlin Cooks - Butternut Squash Pasta Shells http://www.youtube.com/watch?v=I5514oB2wb0 Holiday Veggie Wellington - serves 8-10 people 2 sheets  Puff pastry 6 medium or 2 large Portobello Mushrooms  8 cups Stuffing or stale Bread Cubes 1.5 cups diced Celery 1.5 cups diced Onion 1 cup Veggie Sausage 1 tbsp fresh Sage or 2 teaspoons of dried ground Sage. 2 tsp dried Thyme Approximately 2 cups of Veggie Stock 3  Leeks  6 cups of Chopped kale 1 large Sweet Potato or Yam 2 tbsp Olive oil 1/8 cup Red wine- optional Salt and pepper First place puff pastry on parchment paper to thaw. When thawed unfold and roll out into one large sheet.  Prepare All veggies to stuff the Wellington: Mushrooms -Slice Portobello mushrooms. Season with salt. Sauté in olive oil until browned on both sides. Add about 1/8 cup of wine and sauté until no moisture is left.  Stuffing- Sauté celery and onions until onions are clear (sometimes I use carrot or parsnips too). Add sausage and cook for a few minutes. Add veggie/sausage mixture  to the stuffing. Add sage and thyme (or seasoning mix if stuffing came with it).  Be careful to check commercial stuffing mix it often includes chicken flavoring which vegetarians and vegans don't eat).  Slowly add stock about 1/2 cup at a time until bread is moist but not wet. Add salt and pepper to taste. You will only use about half of this stuffing in the Wellington. Leeks- Slice the white parts of the Leeks and sauté in approximately 1 tbsp of olive oil until caramelized ( about 20 minutes).  Add sugar if you want more sweetness. Season with salt. Kale- steam kale until it is bright green. (about 5 minutes) then drain it. Sweet Potatoes- Thinly sliced. (about 1/4 inch thick) the Sweet potatoes. Place the puff pastry on a Silpat or parchment lined cookie sheet. Now layer the vegetables on to the puff pastry. First the mushrooms, then the stuffing, caramelized leeks, kale and finally the sweet potatoes. Fold over the ends of the puff pastry and then the sides so the veggies are completely covered. Score the top and poke a couple of holes in it so steam can escape. Chill the Wellington for at least an hour. It can also be frozen at this point (no need to thaw before cooking).  Bake at 425 for 15 minute then reduce the heat to 350 for 30 to 45 minutes or until puff pastry is nicely browned.

One very fancy dish that will blow everyone's minds on Christmas Eve is Wellington Seitan. It is not only appealing to the eye, but it's also so delicious, that everyone will want more! The mushrooms and the mustard enhance the taste of the seitan really well and the puff pastry makes it crunchy and lavish. Ingredients: ( Makes about four or five servings) - 1.5 pounds seitan (Recipe here: https://www.youtube.com/watch?v=iOeE-5TGK9A) - 1 pound mushrooms - 1 cup flour - 1/4 cup vegetable oil, plus more for greasing the pan - 1/2 cup mustard (I like using Dijon mustard, but you can use the one you prefer) - 1.5 pounds puff pastry dough (Recipe here: https://www.youtube.com/watch?v=9JRD05ci7UU) - 1/4 cup plant based milk - 3 tbsp maple syrup - 1 dash rock salt Procedure: - Chop the mushrooms finely or place them in a food processor. - Put on a pan on medium heat to extract all the moisture. Set aside when ready. - Mix the flour with the oil. - Add enough water to make a runny mix. - Heat up an oiled pan. - Pour some of the mixture on it. - Tilt the pan so there's a thin even layer on it. - Let that side cook on medium fire. - When the edges detach, you can flip it. - Make as many crepes as you need to wrap the seitan. - Smother the seitan in mustard. - Line the crepes on a piece of film. - Spread the mushrooms on top. - Place your seitan at the center. - Add more mustard if needed. - Wrap it tightly, chill for 20 minutes. - Roll out the pastry dough. - Place the unwrapped seitan at the center. - Roll it in the puff pastry dough. - Put water on the seams so they stick. - Place on a tray lined with silicone paper. - Preheat the oven at 400ºF. - Add a decoration if you're feeling creative. - Brush with a mixture of vegan milk and maple syrup. - Put some rock salt on top. - Bake for ten minutes, then, lower the temperature to 350ºF and bake for 15 more minutes. - Take it out of the oven when it's golden brown. - To serve, cut in thick slices. - Serve immediately. - Enjoy! Festive Portobello Mushroom Wellington: Ingredients: For the mushrooms: 4 portobello mushrooms 4 cloves Garlic (minced) 1 tbsp Fresh Thyme (leaves) 1 tbsp Fresh Rosemary (finely chopped) Splash Olive oil Sprinkle Salt Sprinkle Pepper For the Nut Roast Filling: Splash olive oil 1 large red onion (finely chopped) 1 tbsp fresh rosemary (finely chopped) Sprinkle Salt Sprinkle Pepper 1 cup white wine 1/2 tbsp brown sugar 2 cups chestnuts 2 cups pecans 2 slices seeded bread 1/2 cup vegetable stock For the Wellington case: 2 blocks short crust pastry (you will have some left over) 1/2 cup soy milk Method: 1 Put the portobello mushrooms in a baking tray & cover in a splash of olive oil 2 Sprinkle the rosemary, thyme, salt, pepper & garlic over the top of the mushrooms 3 Bake at 200℃ (392℉) for 15 minutes & once they’re ready, set to one side to cool (this gives you the time you need to prepare the next stage of the dish) 4 Put the red onion in a pan with olive oil & fry until it’s translucent 5 Add the rosemary, thyme, salt, pepper & cook them together until they start sticking 6 Add a cup of white wine & cook the alcohol off 7 Add some brown sugar & mix it round so it caramelises, pour the mixture in a glass mixing bowl 8 Put the chestnuts, pecans & bread in a food processor & whiz them all up into crumbs 9 Add the crumbly mixture into the glass bowl with the onions & pour in the vegetable stock (gradually!) 10 Stir the mixture round with a wooden spoon so it clumps up (it needs to feel like plasticine) 11 Push 1 cm thick layer of the mixture onto a sheet of shortcrust pastry (laid out on a baking tray) 12 Mould the mixture with your hands into a large, thin, wide sausage shape 13 Put the pre cooked portobello mushrooms on top of the “sausage” 14 Encase the mushrooms in the rest of the nutty mixture & smooth it out with your hands 15 Carefully lay the second sheet of shortcrust pastry over the top of the nut roast mound 16 Push the pastry down with your fingers 17 Cut off the edges of the pastry with a pizza cutter (or a very sharp knife) & remove the excess (use this to cut of shapes to decorate your wellington) 18 Seal the edges with a fork - take care here, make it look good! 19 Decorate your wellington with shapes you cut out of the spare pastry & fork in air holes 20 Bake at 200℃ (392℉) for 40 minutes (be sure to CHECK after 30 minutes, if it looks ready, take it out of the oven!) 21 Use a bread knife to carve the Wellington into slices 22 Serve with all the trimmings BOSH! Servir avec la purée et les légumes de votre choix et recouvrir le tout de gravy :) (recette ci-dessous) Gravy: 1 poignée de Champignons, 1 Carotte, 1 branche de Céleri, 1 Echalote, 1 gousse d’Ail (Le tout grossièrement haché) 50 cl de Bouillon de Légumes 1 /2 càs de Marmite (remplacer par 1 càs de Sauce Soja) 1 càs de Sucre 1 càs de Farine ou Fécule 1 cas de Vinaigre de Vin (remplacer par du vin rouge) Sel & Poivre Vous pouvez l’ajuster en fonction de vos goûts avec du paprika fumé ou un peu de crème végétal pour un côté plus onctueux ;) Bûche façon Tiramisu (4 à 6 personnes) : Biscuit: 4 Yaourts de Soja (2 à la vanille 2 natures pour moi) 210g de Farine de Blé 180g de Sucre 5 càs d’Huile de Colza, Tournesol ou Coco 1 Sachet de Levure Chimique (9g) 1 Sachet de Sucre Vanillé 1 càc d’Extrait de Vanille Cuisson : Four à 180° pendant 50 min. Préparer la veille idéalement afin de faciliter la découpe! Crème: 600g de Crème végétale à fouetter (coco marque Kara ou soja spécial chantilly) 300g de Yaourt de Soja Vanille (aussi appelé dessert soja vanille) 60g de Sucre 1 sachet de Chantibio ou Chantifix 2g d’Agar-Agar (la moitié d’un petit sachet) 1 pincée de Vanille en Poudre Montage: 1 petite Tasse de Café fort 1/2 càc d’Extrait d’Amande Amère (remplacer par 1 à 2 càs d’Amaretto) 4 càs bombées de Pâte à tartiner de Speculoos (remplacer par ma recette de Nutella Vegan) Laisser poser au frigo au moins 24h mais j vous conseille fortement 48h de temps de pause. Who said wellington was just about beef? This festive vegetarian recipe packs a flavoursome punch that will keep both carnivores and vegetarians happy this Christmas. See the recipe below or subscribe to our You Tube for year-round gourmet inspiration: http://bit.ly/10r0TWc Serves 4 Prep / Cooking 30-35 mins Active Time 20-25 mins Full Ingredients: 325-375g pack pre-rolled puff pastry (butter puff if possible) 8 large mushrooms, each maximum 7-8cm diameter 250g pouch of ready to eat Merchant Gourmet Puy Lentils 200g Merchant Gourmet Whole Chestnuts, separated, 8 cut into quarters, the rest finely diced 20g (average supermarket size) bunch of chives, sliced 3 cloves of garlic, peeled and finely chopped 250g tub crème fraiche (half fat if you prefer) egg yolk beaten with 1 tsp milk 25g pack of Merchant Gourmet Dried Porcini Mushrooms soaked in 250ml boiling water for 5 minutes Salt and black pepper Directions: 1. Pre-heat your oven to 220c / 425f / Gas 7 Upper Middle Shelf. Boil your kettle. 2. Start with the puff pastry. Unroll it carefully. Cut the pastry into 4 even sized (approx. 17cm x 13cm) rectangles. Put the pastry in the coldest part of your fridge, it is much easier to work with when it is cold. 3. Next, prepare the mushrooms. Get a baking tray and a large bowl. Put the mushrooms, round side down on the tray. Pull out their stalks. Chop the stalks into lentil size pieces. Put them in the bowl. Add the lentils, the chopped (but not the quartered) chestnuts, 4 tbsp crème fraiche, 6 tbsp sliced chives and the garlic. Season to taste with salt and pepper. 4. Season the mushrooms with salt and pepper. Mix half the of crème fraiche with the lentil mixture then put an eighth of the mixture in each mushroom and squash them down. Turn one mushroom on top of the other, quickly so that the lentils don’t fall out, to make four sandwiches. 5. Next make the egg wash. Get a small bowl. Add the egg yolk and milk. Mix together with a fork. 6. Get the puff pastry rectangles out of the fridge. Brush them with egg wash. With the egg washed side facing down, put the pastry rectangles over the top of the mushrooms. Cup your hands over the top, mould the pastry around the mushrooms, the main thing is that you cover the joint; depending on the size of the mushrooms, you may need to stretch the pastry slightly on the thinner side of the rectangles. Brush the pastry generously all over with egg wash. Bake the mushrooms for 18-20 minutes in the pre-heated oven until the pastry is golden. 7. Make the porcini sauce while the mushrooms bake. Rehydrate, as per pack instructions. Once rehydrated, lift the porcini out of the water, pour the residual stock carefully into a small saucepan, there may be a little grit near the bottom, throw this away. Chop the porcini as finely as you can. Add the chopped porcini to the pan. Put the pan onto a high heat. Bring to the boil. Reduce by 1/3. Take the pan off the heat. 8. When the pies are ready and golden, stir the remaining crème fraiche (you’ll have about 130g) and sliced chives into the sauce. Warm the sauce through but don’t boil it. Season to taste. Serve with the mushroom wellingtons.
